The slow-cooked beef trahanas with Naxos Arseniko cheese and wild mushrooms is old-school Greek cooking elevated to something you weren’t expecting. And the whole grilled fish — chosen from whatever the fishermen brought in that morning — is as honest as fine dining gets.
