Built Around What Santorini Grows

Finding a good vegan restaurant in Oia used to be a challenge. Most places offer a token salad or a plain pasta and call it a day. At Oia Gefsis, we took a different approach — we built an entire vegan menu around what Santorini does best: local produce grown in volcanic soil, seasonal greens, and recipes rooted in Cycladic cooking traditions.

Every dish here is plant-based by design, not as an afterthought. Our chefs work with ingredients sourced from across the Greek islands — Naxos potatoes, Santorini cherry tomatoes, capers, kritamos from the cliffs, and fresh herbs that change with the season. The result is food that feels generous, satisfying, and full of character.

What to Expect from Our Vegan Menu

We cover the full table — from starters and salads through to mains and dessert. The slow-cooked chickpea stew with sumac and citrus is a guest favorite. The briam — a traditional Greek oven-baked dish with zucchini, eggplant, and Florina pepper — is comfort food done right. And the mushroom pasta with morels, king oyster mushrooms, and truffle is the kind of dish that makes people forget it’s vegan.
For something lighter, the Cycladic salad with homemade lalaggi and local Santorini capers or the green salad with caramelized hazelnuts and citrus dressing both hit the spot.
We close with a traditional semolina halva — made with Corinthian raisins, walnuts, and hazelnut cream. Simple, honest, and exactly how it should be.

Book a table early during peak season (June–September). The best terrace seats fill up fast, especially between 9 and 10 AM.
